Rinse peel ribs, pat dry and place in a large bowl.

In another baking bowl, mix honey, five-spice garlic, powder, sherry, nuoc mam sauce, citronella grass and chilies.

Spread the honey mixture over the peel ribs and let sit for four hours.

The ribs can be cooked on the broiler (turn frequently to the other side) and brush with marinade) or in the oven at 190 °C / gas mark 5 (brush as well).

Tip: Cook only with high-quality spices – they are the be-all and end-all in a good dish!
