For the quesadillas with chorizo, mix the cheese (mozzarella and Gouda) with the chopped chorizo, chopped green onions and chilies and season with salt and pepper. Divide this mixture among 4 tortillas and cover with the other 4 tortillas. Heat oil in a skillet and fry the quesadillas in it, one at a time, on both sides until the cheese is melted (about 4 to 5 minutes), pressing lightly. Remove the quesadillas from the pan and keep them warm until the others are ready. Then quarter the quesadillas with chorizo and serve.
