Rinse cooled meat, rub dry and cut into small cubes.

Crush the cinnamon stick, cardamom pods, cumin, star anise, Szechuan pepper and chili flakes in a mortar, pour over the meat and marinate everything together with the oil.

Sauté the meat with the spices, add the aiwar and pour the clear soup over it and simmer for about 35 minutes.

Cut the peppers into cubes, peeled potatoes, add everything to the meat and cook until al dente, add the drained beans, simmer briefly on low heat. Then season with coriander, vinegar, oregano, sugar and perhaps garlic.
