Season the grilled octopus like the fishermen in the Algarve according to their taste. E.g. eat garlic butter or mayonnaise with it or a spicy tomato sauce.
Rinse the squid and rub dry. Grill for about 6-10 minutes over glowing charcoal on an oil-brushed grill. Turn once to the other side. Cooking time depends on the size of the squid, the distance of the food from the charcoal, and the intensity of the embers.
Inexperienced cooks should therefore constantly monitor the cooking process. Tip: Fresh squid has a pleasant salty smell of the sea. It will keep in the refrigerator for one to 48 hours, but is best eaten on the spot.Like all mollusks, squid should not be overcooked to prevent it from becoming tough and rubbery.
