For preserved quince, first prepare a sugar solution: To do this, heat sugar and water over high heat (sugar must dissolve completely), boil once briefly and remove the solution from the heat.
Rub the quinces clean with a dry tea towel, rinse them, peel them, cut them into quarters or eighths, cut out the core and any brittle parts, sprinkle them with a little lemon juice and place them in lightly salted water.
Drain the fruit neatly and place it, round side up, in the prepared preserving jar layers.
Once a jar is filled, pour the slightly cooled sugar solution over it. The quinces should be neatly covered.
Boil down preserved quinces in a water bath or steamer for 30-40 min. at 90° Celsius.
