For the foam rolls, roll out the puff pastry and cut 20 approx. 1.5 cm wide strips per package and roll them up overlapping on small foam roll molds.

Spray the tray with a little water and bake at 220 °C in the preheated oven with top and bottom heat in the middle until light brown, about 15 minutes.

Bring the granulated sugar and water to the boil and boil for 3 minutes. In the meantime, beat the egg whites with the powdered sugar and vanilla sugar until very stiff, then beat the sugar solution into the whites in a thin stream while beating.

Do not use a plastic bowl, it would be damaged by the hot sugar solution. Fill the cooled rolls using a piping bag.
