Knock the steaks a little with a little salt and pepper and brown them in the oil. Dissolve the butter and sauté the rosemary needles until the butter foams up. Extinguish with the gravy. Place the cheese in fine slices on top of the steaks and bake in the broiler over high heat until the cheese is golden brown. Serve on plates and pour the rosemary sauce over them.
