For the health cake, cream the butter with half the amount of powdered sugar. Add the yolks little by little and mix everything until fluffy.

Then add the potato flour. Mix the mixture well with milk. Stir in the snow beaten with the remaining half of confectioners’ sugar until firm.

Alternately add the flour sifted with baking powder. Pour the dough 3/4 high into a greased floured pan and bake slowly at 160 degrees for about 40-50 minutes.

Serve the health cake sprinkled with powdered sugar.
