A great cake recipe for any occasion:
Prepare and make: about 35 min., Bake: about 35 min.
(*) for a baking tray of 28 cm ø, bottom lined with parchment paper.
Place round rolled out short pastry in the prepared baking tray, prick very tightly, put to cool for about ten minutes, place parchment paper and smaller baking tray on top. Blind baking: ten min in the lower half of the oven heated to 200 °C. Remove small baking tray and parchment paper, continue baking for about ten minutes. Remove, reduce temperature to 150 °C.
Fillet grapefruits and oranges, set aside.
Beat egg whites until stiff, add sugar and vanilla sugar, continue beating briefly until glossy. Mix in egg yolks, beaten.
Spread half of this amount evenly on the dough, place the fruit on top, decorate with the rest of the amount. Ready Bake: about fifteen min.
