Have fun preparing this mushroom dish!
Cut the shallots into strips and the garlic into slices. Pluck rosemary needles from the branches and cut off. Cut pepper in half lengthwise, remove seeds and finely dice. Remove stems from shiitake mushrooms. Clean mushrooms and herb mushrooms, cut in half. Roast each type of mushroom in a coated frying pan at very high temperature in a tablespoon of oil for three minutes. Salt, season with pepper and remove.
Sauté garlic, rosemary, shallots and pepper in the remaining oil. Add honey and a little sugar, bring to a boil, pour vinegar. Add fried mushrooms, boil, season with salt, season with pepper. Cut the stem ends of the enoki into small pieces. Serve the enoki raw with the hot mushrooms. Cool and bring to the table.
