In dumplings is best to use old rolls. With fine mushrooms the dumplings get an extraordinary spicy flavor.

Cut the buns into very thin slices, heat 2/3 of the milk and pour it over the buns. Sources. Rinse and clean the mushrooms and cut them into thin slices. Peel and chop the onion and fry it in half of the butter. Add mushrooms and roast until they are completely dry. Knead the soaked bread with the mushrooms and the eggs to a dough. Season with salt and pepper. Rinse and peel the kohlrabi. Also rinse and set aside the beautiful leaves. Cut the kohlrabi into slices, sauté in the remaining butter, pour the remaining milk and cook for 15 minutes. Mash the kohlrabi, add the creme fraiche. In a large saucepan, bring salted water to a boil. Form 12 dumplings from the bread mixture, slide into the water and cook in the boiling water for 5 to 10 minutes. In the meantime, heat the sauce repeatedly. Add the finely chopped kohlrabi leaves and kitchen herbs, season with white pepper and salt. Serve the sauce with the dumplings.
