Pound chili, cumin, garlic in mortar to a paste, adding a little water if necessary. Add paprika powder. Slowly add oil as for mayonnaise, you can also work with the magic wand. Season with red wine vinegar and salt.
It is eaten with “papas arrugadas”, small potatoes with skin cooked in a lot of salt.
But tastes just as good with our potatoes and with meat. Great with grilled food!
Our tip: Use high quality red wine for a particularly fine taste!
