For the pumpkin strudel, peel the pumpkin and grate finely. Wash the spinach leaves and drain well, or defrost the frozen spinach leaves. Cut the ham and feta cheese into small pieces.roast the pumpkin seedsein a pan briefly.
Roll out the puff pastry and place the shredded pumpkin, spinach leaves, ham pieces and feta cheese on top. Sprinkle the pumpkin seeds on top.
Roll up the puff pastry and place the strudel on a baking tray lined with baking paper. Brush with whisked egg yolk for a nice color. Poke a few holes in the strudel with a fork to keep it from cracking.
Bake in the oven preheated to 200 degrees hot air for about 30 minutes.
