Instructions:

For the minced roast on carrot-tomato vegetables mix minced meat, finely chopped onion, eggs, bread cubes, parsley, garlic, salt, pepper and knead with your hands. Allow to marinate.

In the meantime, peel the carrots and cut them into pieces of about 1 cm, chop the onion coarsely and put them together in a roasting pan. Pour tomato sauce over it and add a little salt.

Form minced meat into a roll, roll in breadcrumbs and place in roasting pan. Put into the preheated oven and bake at 180 degrees for about 40 minutes.

In the meantime, peel and halve the potatoes, add to the roasting pan and bake for another 40 minutes. Arrange the minced roast on carrot-tomato vegetables and serve.
