Refined, uncomplicated.

(*) The recipe yields about four medium jam jars Cut the melon flesh into small pieces. Place in a frying pan with the juice of one lemon, the port wine and the preserving sugar.

Peel the ginger and chop or grate it finely. Add to the melon mixture form. Mix everything well and let it stand for one night.

Mash a good half of the pulp with a fork. Place in a frying pan with the remaining melon mixture. Bring to a boil while stirring. Now bubble for three min. Immediately fill into clean jam jars and seal. Keep in a cool place.
