For the spice oil, wash the rosemary and thyme and let them dry well. Fill a suitable sealable bottle with the herbs, salt, pepper and garlic and add the oil. (All the solid ingredients must be covered by the oil).

Leave the oil to infuse for 2 – 3 weeks and then use.
