Glazed King Prawns with Mango and Green Onion Salad

For the salad:


For the salad, peel the mango with a peeler. Cut the flesh vertically from the flat stone on the right and left and cut into bite-sized strips. For the dressing, whisk together wine vinegar, sesame oil, olive oil and sugar syrup until well blended. Stir in the cilantro greens with the chili, garlic and ginger. Season with salt, pepper and sugar and mix well with the mango strips and green onions. Wash the king prawns and carefully pat dry. Heat the olive oil in a pan and fry the prawns in it. Lightly crush the garlic clove with the back of a knife and add to the shrimp along with the thyme sprig. Fry briefly. Remove the garlic and thyme. Season the shrimp with salt and pepper and add the chopped parsley. Cut the ice-cold butter into small cubes and mix into the shrimp for glazing. Arrange the salad with the shrimp on plates and garnish with parsley leaves.
