Clean the frisée lettuce and cut into wide strips. Grate the Sbrinz into shavings using a rösti grater. Clean the mushrooms and cut them into slices.
For the sauce, mix salt, pepper, vinegar, mustard and 0el.
Add the shallot and garlic to the sauce.
Just before serving, fry the bacon in its own fat until crispy. Add the mushrooms and fry them briefly. If they draw juice, evaporate it completely. Finally, cut the chives with scissors.
Mix the lettuce with the sauce and arrange on a large platter. Evenly distribute the mushroom and bacon mixture and cheese shavings over the top. Serve immediately.
