Dissolve the yeast with the sugar in 1/8 l of lukewarm water and let it rise for 10 minutes.
In a suitable baking bowl, mix the flours and groats, add the risen yeast, the remaining water, melted fat, salt and spices and knead everything together well until the dough separates from the baking bowl.
Leave to rise for 20 minutes in a warm place with the lid on. Now knead repeatedly on a floured board, form a round loaf and place it on a floured dishcloth in a suitable round baking dish.
Cover with the corners of the cloth and place in a warm place for about 1 hour to rise. Now tip onto a greased baking sheet, brush with water and sprinkle with cilantro.
Lightly press in the grains and bake the bread in a preheated oven at 180 °C for about 75 minutes.
