To make the fan roast, place the pork loin on a board and make three cuts lengthwise along the top, about half as deep as the loin is thick.
Rub a mixture of salt, pepper and pork roast seasoning firmly into the cuts. Then place the cheese slices first, then the smoked meat slices in the cuts in the roast.
Tie the roast well with kitchen twine or sausage string. Heat the lard in a pan and sear the roast.
Put the roast in a roasting pan with a lid, pour some water and the drippings, cover and roast the roast for about 2 hours at 200 degrees.
Remove the string and serve sliced.
