Hard boil the eggs, rinse, peel and chop. Remove the skin from the cucumber, peel the onion. Finely dice the gherkin, onion, cucumber and apple.
Mix all ingredients in a baking bowl.Stir the mayo with juice of one lemon, season with salt and pepper and mix with the prepared ingredients.
Butter wholemeal bread rolls and evenly spread the egg hackerle on them. Cut the chives into rolls and sprinkle over the Häckerle.
Our tip: Always use fresh chives if possible!
