For the apple slice with cookie topping, first prepare the shortcrust pastry.

For the shortcrust pastry, crumble flour, butter and sugar. Knead with the egg to form a dough.

Roll out the dough and place it on a greased and floured baking tray. Pre-bake in the oven at 180 degrees until very light.

Mix the sliced apples with sugar and cinnamon and spread on the pre-baked base.

For the sponge, beat the eggs and sugar until thick and fold in the flour.

Spread the sponge mixture over the apples and bake until light. Allow to cool slightly.

Divide the apple slices with sponge cake into nice squares and serve with a little whipped cream.
