For the currant cake, separate the eggs. Beat the egg whites until stiff. Beat the yolks with the powdered sugar and vanilla sugar until foamy, slowly adding the oil.
Mix flour with baking powder, sift over the egg mixture and stir in together with the milk. Finally, fold in the snow and spread the mixture on a baking tray lined with baking paper.
Sprinkle the dough with currants and bake in a preheated oven at 180 °C for 30 – 40 minutes.
