Mix flour, oil, butter and salt, add egg and water, work the dough with a kitchen knife and leave to cool for 1 hour. Butter the baking tray (tray with a high edge), line with dough and cut the edge a little bit. Sprinkle the dough with breadcrumbs and grated almond kernels. Spread fruit (apples in wedges, plums and apricots in halves, cherries loosely distributed) evenly on top.
Beat eggs and sugar until creamy, add whipped cream and milk. Pour the glaze over the fruit. Bake the cake in a heated oven at high temperature (270 degrees) for half an hour. For plum or apricot custard, add 1/2 tbsp. flour to the glaze.
