Preheat the oven to 220 °C. Grease muffin tins or line with paper cups if desired.
Mix dry ingredients in a large baking bowl.
In a small baking bowl, mix eggs, buttermilk and butter. Add to dry mixture. Fold in grated cheese. Add additional buttermilk if needed: The batter should be just runny enough to pour.
Pour batter into muffin tins. Bake for about 20 minutes. Then let cool for 10 minutes.
Serve the muffins lukewarm.
