For the almond cinnamon stars, pass the powdered sugar through a fine sieve. Beat the egg whites until stiff, adding the sugar by the tablespoonful and stirring it in.

To coat the stars, remove 5 tablespoons of beaten egg whites and set aside. Stir the almonds, vanilla sugar and cinnamon into the remaining egg white mixture.

Roll out the dough on a work surface dusted with sugar about 0.5 cm. Cut out stars.

Dip the cookie cutters in powdered sugar from time to time to prevent the dough from sticking.

Place stars on a baking tray lined with baking paper and brush with the beaten egg whites set aside. Bake the almond cinnamon stars in a preheated oven (hot air: 100 °C) for approx. 20 minutes.
