Beat egg whites with salt, gradually add powdered sugar. Continue beating until a thick creamy mass is formed. Remove 1/4 of the mixture and refrigerate.
Mix almonds with cinnamon and stir into the remaining egg white mixture. Let rest refrigerated for at least an hour.
Preheat oven to 120 ºC hot air.
Sprinkle the work surface with powdered sugar and roll out the dough. Cut out stars and place on a baking tray lined with baking paper. Dip the cookie cutter repeatedly into powdered sugar in between.
Brush the set aside egg white mixture onto the stars and bake the cinnamon stars for about 15 minutes. Make sure that they do not get too brown!
