For the chicken with walnut stuffing, preheat the oven to 190 degrees. Mix 1 tablespoon butter, garlic, walnuts and parsley in a bowl until homogeneous. Season with salt and pepper.

Carefully loosen the skin from the chicken without damaging it. Then spread the butter mixture evenly underneath. Place the limes in the belly cavity. Pour the oil into a roasting pan and place the chicken in it.

Spread remaining butter (about 1 tablespoon) over the skin. Roast in the oven for about 1 hour 45 minutes, basting occasionally with the juices that come out. Let the chicken rest for about 10 minutes after roasting.

Now thicken the sauce. To do this, dissolve the cornstarch in water and stir into the gravy. Put the roasting pan on the stove and let the sauce thicken over low heat, stirring constantly.
