For the walnut bread, whisk the crumbled yeast with water in a bowl. Add salt, cinnamon and honey and stir well. Add the freshly ground cereals and the coarsely chopped walnut kernels.
Knead the dough for 10 minutes and let it rise for 15 minutes. Then knead again.
Preheat the oven to 200 °C. Put the dough into a greased loaf pan (300 mm) and let it rise again for about 5 min.
Bake the walnut bread for the first 5 min. at 220 °C, then for another 25-30 min. at 190 °C.
