Instructions:

For the Carinthian meat pasta, first prepare the pasta dough. Knead all the dough ingredients into a smooth but not too soft dough and let it rest covered for about 1 hour.

Then form the dough into a roll and divide into about 20 pieces of equal size. Roll these pieces out into oval sheets.

For the filling, chop the onion and garlic and fry in hot butter. Mix the smoked meat with the onion and garlic, add the spices and the eggs and add breadcrumbs until the mixture is bound.

Now form small dumplings from the mass. Now place the small dumplings on the oval dough sheets and fold the dough over them like a pocket and “crimp” the ends with your fingers (press them firmly together with your thumb and forefingers so that a jagged edge is formed).

Now put the meat noodles into boiling, salted water and simmer on low for 10 – 12 minutes. The Carinthian meat noodles are ready as soon as they rise.
