Baking dough:


For the curd balls, squeeze the curd through a cloth so that it is quite crumbly. For the batter, mix flour, salt, oil and water until smooth. Beat the egg whites until stiff and fold into the batter.

In another bowl, prepare the curd mixture. Mix the curd, egg yolks, sugar, salt, flour, lemon zest and rum until smooth. Fold the batter into the curd mixture and beat the 2 egg whites until stiff. Then fold in this snow as well.

Heat the oil for frying and add the mixture by the spoonful to the oil and fry for 3 to 4 minutes each until golden brown. Drain on kitchen roll and sprinkle the curd balls with powdered sugar before serving.
