For the whole grain congee, place water or vegetable soup in as large a pot as possible, add rice and simmer, covered, over low heat for about 4 hours. Just before the end of cooking, add shrimp, fish and/or vegetables as desired and cook briefly. Season to taste with a little soy sauce and salt if desired. Pour into bowls and serve with a porcelain spoon.
