A delicious mushroom dish for any occasion!
1. puff pastry sheets to thaw one against the other. Butter fireproof ramekins.
2. cut venison into very thin slices and mix with salt, pepper and game spices.
3. clean mushrooms and cut into pieces or slices. Preparation:
1. layer mushrooms, kitchen herbs, venison and berries alternately in ramekins.
2. place a slice of ham on each. Drip game stock and port. 3.
3. brush the edges of the ramekins with egg white. Cut puff pastry sheets in half, place two halves on top of each other and roll out a little. Cover the ramekins generously with the pastry. Press the edges smooth and cut the surfaces with a kitchen knife. 4.
Bake in a heated oven at 200 degrees for about forty minutes. Serving:
Immediately before serving, cut a lid into the puff pastry, opening it only at the table.
