For the Bismarck herring salad, blanch (scald) the runner beans briefly in boiling salted water mixed with a little baking soda until firm to the bite. Drain, rinse with cold water and cut in half. Cut onions into rings or wedges. Now combine cooked beans, green beans and onions in a bowl.

Season with soy sauce, oil, a splash of vinegar, Tabasco sauce, pepper, salt and a pinch of sugar and mix everything well. Arrange in glass bowls in batches. Cut herring into strips about 2 cm wide and place over salad.

For garnish, flavor cream with lime juice and salt and serve separately with Bismarck herring salad.
