For the porterhouse steaks, the meat is marinated before it goes on the grill.
Have the meat prepared at the butcher, you can use the fat edge to grease the grill.
For the marinade, peel the onion, wash the herbs and chop everything finely. Crush the peppercorns in a mortar.
In a large bowl, mix the olive oil with the herbs and the onion and put the meat in it, s0so that it is well covered.
Cover and leave in the marinade for about 3 hours and then place the steaks on the grill, drained a little.
Season with salt and pepper only after grilling.
Remove the porterhouse steaks from the bones and cut into any pieces.
