Cook the pasta in enough boiling salted water for 10 minutes. Steam the broccoli in a little salted water for 10 min until soft.
Peel and finely dice the onions. Cut the bacon into thin strips. Heat the fat in a frying pan and fry the bacon until crispy. Add the onions and fry them briefly. Drain the noodles and broccoli well in a sieve, then mix them with the crispy bacon.
Mix the whipping cream, 2 whole eggs and 2 egg yolks and season well with salt, pepper and nutmeg (freshly grated). The egg yolks over the noodles form and at low temperature and closed frying pan stocken.
Our tip: Use bacon with a fine, smoky note!
