For the salmon mousse:


For the salmon mousse, hard boil the egg and then rinse in cold water. Peel and cut into small pieces. Cut the smoked salmon into small cubes.

Put both ingredients in a bowl and blend very finely with a hand blender. Blend crème fraîche until smooth and stir into salmon mousse…. Season to taste with a little salt and pepper.

Boil the remaining eggs in salted water for 10 minutes. Rinse well in cold water, peel and cut in half lengthwise.

Remove the yolks and stir into the salmon mousse.

Pour the creamy mixture into a piping bag and pipe onto the egg halves.

Decorate the filled eggs as you like and serve.
