* Cut beef into pieces, do not remove fat.
* Together with the bones put in a little water and boil briefly.
* Then place in a baking dish with iced water until the meat and bones have cooled down completely (so that the later clear soup remains clear). * Then boil the meat and bones with 4 liters of water and simmer at low temperature for about 3 hours.
* Add the vegetables, cleaned and cut into cubes or strips, and cook for another hour.
* Season to taste with pepper, nutmeg, salt and port wine. * Strain the clear soup through a clean kitchen towel.
* As a garnish taste small pancake strips, dumplings, culinary herbs and egg sticks.
