For a square gratin dish (20 x 28 cm):

At about one year old, your child can nibble this cake. The mass is enough for 4 to 5 main meals or as an afternoon meal for 8 to 10 servings. In the refrigerator, this curd cake keeps fresh for 3 to 4 days.

Knead a short pastry from salt, flour, fat, sour cream and honey and let it rest wrapped in foil for at least 1 hour. Preheat the oven to 180 °C.

Grease the gratin dish and dust with flour. Separate the eggs.

Mix yolks with sour cream, lemon zest, curd cheese and honey until smooth.

Roll out the dough and spread it on the baking tray or dish, prick the bottom with a fork. Rinse and clean the strawberries, cut the larger fruits in half.

Rinse and quarter the nectarine, remove the stone and cut the flesh into segments. Whip egg whites to stiff peaks and fold into curd mixture. Season the mixture with a little lemon juice and smooth it on the bottom of the gratin dish.

Place the fruit in the curd mixture and bake the cake for approx. 55 min.
