For the chocolate mousse with Amarena cherries, chop the chocolate finely and melt it with the espresso while stirring.

Allow the chocolate mixture to cool. Whip the cream with the vanilla sugar until stiff. Separate the eggs. Beat egg whites until stiff, mix egg yolks with sugar until creamy and stir in chocolate. Stir in whipped cream and slowly fold in beaten egg whites.

Divide the mousse among 4 tall glasses and let set in the refrigerator for about 3 hours. Spread the Amarena cherries over the mousse. Save 4 cherries for the decoration. Whip the cream with the powdered sugar until stiff and pipe onto the mousse using a piping bag.

Spread the amarena juice over the whipped cream and place a cherry in the center of each whipped cream.
