For the chocolate sponge roll, beat the egg whites with cold water until very stiff, add the sugar and beat in.

Fold in the egg yolk. Mix flour, cornflour, cocoa and baking powder, sift into the mixture and fold in carefully. Line a baking tray with baking paper, spread the dough on it and bake.

Immediately turn the sponge out onto a cloth and peel off the paper. Roll up the sponge sheet with the cloth,let it cool and then unroll it again.

Drizzle the sponge with brandy, spread first with jam and then with whipped cream and roll up again with the help of the cloth. Sprinkle with sugar.
