Crushed cherry tomatoes with basil:
Cut the cherry tomatoes in half, slice the onions very finely. Roughly chop the basil, peel and finely dice the garlic clove. Put everything in a suitable bowl and season with sea salt, coarse pepper and a pinch of sugar. Knead with your hands for about three to four minutes. Let stand for about 20 minutes and season again.
Veal involtini with mozzarella and Parma ham:
Drain and pat mozzarella and cut into very small cubes. Place the slices of meat between two layers of cling film and pound very thin. Then season lightly with salt and season with pepper.
Place the ham on the meat pieces and spread the cheese evenly on top. Roll up the meat tightly and attach with toothpicks. Grill the involtini on a not too hot grill for about five to six minutes, turning, and bring to the table with the cherry tomatoes.
Tip: Always use an aromatic ham, it will give a wonderful touch to your dish!
