Preparation (circa 60 min):

Remove sausage meat from casing, mix well with peeled, finely grated pumpkin and spring rolls, cut off chili pepper, fold in, season with a little salt and pepper.

Cut the meat into leaves, brush the filling in the middle, roll up, tie with string.

Season the outside of the meat with salt and pepper, sear all over in hot olive oil, add coarsely ground peppercorns, star anise, cardamom, juniper together with ginger, pour in poultry stock, fill up with poultry stock, add 2 rosemary sprigs for flavoring, steam in heated oven at 175 °C for 40 to 45 minutes.

Blanch broccoli roses in lightly salted water until al dente, drain, dry on kitchen paper, sauté briefly in hot olive oil, season with salt, pepper and nutmeg, add walnuts, roll briefly in it.

Roast potato noodles in hot olive oil until golden, season with salt, pepper and nutmeg. Remove the string from the rolled roast, cut into slices, drain the sauce and pour it onto a plate as a mirror, place the meat on top, add broccoli and potato noodles next to it, garnish with rosemary.
