Hard boil the eggs, rinse with cold water and peel. Cut the eggs in half and put the yolks in a bowl. Mix the egg yolks with the onion, mustard, paprika powder and vinegar until creamy and season with salt and pepper. Let sit for about 10 minutes and then spoon back into the egg shells. Now decorate the stuffed eggs with the parsley tips and serve on a large plate on lettuce.
