A bean recipe for every taste:

Note: start the day before.

Soak the white beans in cold water for one night.

A day later, dice the pork. Melt the butter and brown the pork in it. Chop the cabbage and add it together with the onions. When the meat is golden brown, add the mango cut into slices.

When the whole starts to make, pour hot water until the whole is covered with liquid. Once the whole thing boils, add the curry powder as well as the flesh of the tamarind pods. Add the squeezed garlic cloves, the sage leaves, the chili, the soaked beans, the peeled and diced chayotes and the diced melanzane, and simmer gently for 2 hours.

Bring to the table hot.

(*) Replace the Caribbean cabbage with Chinese cabbage, in case not available.

(**) Chayote: a kind of pumpkin from the Caribbean islands. May well be substituted by patisson o. Ae.
