For the filling:
Put to cool.
Crush white bread in a hand mixer, put in a suitable bowl. Add egg, mushroom mixture, pistachios, parsley, mix, pepper, season with salt.
Take out the leg, cut off the lower leg. Season inside with pepper and season with salt. Close leg with splits – filling opening. Fill with stuffing, close opening. Rub meat with pepper, lovage, game spice and salt, rest.
Preheat the oven (220 °C). Sear the leg, finish roasting with the lid on in the oven for about two hours. Cool meat in roasting pan. Remove yarn.
Heat oven (250 °C ). Roll out bread dough until thick. Coat leg with dough, bake on baking sheet for 45 minutes. Rest before slicing.
