For the steaks with cola marinade, first finely chop the garlic cloves. Halve the chili pepper lengthwise, remove the seeds and cut into fine strips. Heat both in a small pot with the honey and bay leaf. Deglaze with balsamic vinegar and cola and simmer for about 2 minutes. Cover and let cool.
Brush meat thinly with marinade, season with sea salt on both sides and sear on grill over direct heat for about 1-2 minutes per side. Switch to the indirect zone and let the steaks sit, turning occasionally, for about 10 minutes, brushing with the marinade.
Season the steaks with cola marinade with ground pepper and serve.
