Instructions:

Mix flour, baking powder, egg yolks and salt in a wide bowl, gradually add the buttermilk, stir until smooth.

Heat the frying oil or lard in a deep fryer to 190 °C. Separate onion slices into rings, dip into batter and fry seven to eight rings each for five minutes until lightly browned. Place on paper towels and drain.

When all the rings are fried, deep-fry them repeatedly for two min in a second round to make them nice and crispy. Drain again and serve sprinkled with salt.
