Preheat the oven to 180°C for the soft cookies. Cover two baking trays with baking paper.

Beat the butter with the powdered sugar until fluffy. Gradually add the yolks while stirring and gently fold in the flour.

Fill the mixture into a piping bag and pipe 30 biscuits onto the baking sheets.

Bake the biscuits in the oven on the middle shelf for about 10 minutes, remove and let cool.

Fill the jam into a piping bag and pipe it onto the bottom of the biscuits.

Dip the jam side of the biscuits into the chocolate coating and place on a piece of baking paper. Allow the chocolate coating to set on the soft cookies.
