Caramel Lollipop

To make the caramel lollipop, first spread a sheet of baking paper or a silicone mat on a smooth surface.

Bring the sugar and water to a boil. Use about enough water to just cover the sugar. Simmer briefly until the mixture is golden brown.

Deglaze with cold water in a bowl to still the bubbles. To do this, hold the bottom of the pot in a bowl of water.

When the caramel has become viscous, use a fork or spoon to drizzle small flakes onto the baking paper. Place a toothpick or lollipop stick into the sugar while it is still warm, allow the caramel lollipops to dry and then carefully remove from the baking paper.
